POLLO ALLA PIZZAIOLA - CHICKEN PIZZAIOLA
This is another classic of Italian cuisine. As long as I can remember, my nonna used to make this traditional recipe for us. I was a finicky eater as a child and the only part of a chicken I’d actually eat was the drumstick. To honor that memory, I’m choosing to use drumsticks only for my version but feel free to use an entire cut-up chicken instead.


POLLO ALLA PIZZAIOLA - CHICKEN PIZZAIOLA
Ingredients:
8 large drumsticks
4 large potatoes, peeled and cut into chunks
1 (28oz) can Italian peeled tomatoes, roughly chopped
1 small onion, chopped
3 garlic cloves, chopped
Extra virgin olive oil, as needed (see directions for specifics)
Salt and pepper to taste
Fresh sage, parsley, basil and oregano to taste, chopped
Directions:
Clean drumsticks and remove any visible fat.
Rinse and blot dry with paper towels.
Season with salt and pepper to taste.
Place about 4 TBSPs olive oil into a large sauté pan.
Heat oil to warm.
Add seasoned drumsticks and allow to lightly brown on each side.
Remove drumsticks and set aside.
Add 3 more tablespoons of olive oil to the sauté pan.
Add chopped onion and garlic.
Sauté on medium heat until soft.
Add tomatoes and a little salt.
Simmer for 5 minutes.
Shut off heat and add herbs.
Stir to mix well.
Place the drumsticks in a 13 by 9 baking pan.
Arrange potato chunks around the drumsticks.
Pour sauce evenly over meat and potatoes.
Place in 375 F oven.
Cook uncovered for about an hour or until sauce dries up.
Serve hot.
Makes 4 servings.
TIPS:
This recipe can be made on the stovetop as well, following the same directions but placing everything in a large Dutch oven to cook on low heat. Stir occasionally to avoid sticking.
Pizzaiola means pizza sauce style. The main ingredients in that sauce are tomatoes, garlic and oregano. If you like a stronger pizzaiola flavor, add an extra sprinkle of dried oregano in addition to the fresh herbs.
Make sure to cut the potatoes in large chunks. In fact, if you cut them small, they will cook too fast and break into pieces.
